Fletcher’s restaurant at the Hotel Captain Cook is looking for a high energy leader who is ready to take the next step in their culinary career. They would be running an upscale, established, fast paced downtown restaurant with a proven track record.

This position is responsible for:

• Day to day operations of Fletcher’s kitchen
• Scheduling & Payroll
• Menu development, Food tastings, and specials
• Monthly food and beverage inventory
• Training of the staff
• Manage associate labor and food cost

Desired Skills:

• Must be ServSafe certified – Responsible accommodations will be made to enable individual(s) to obtain certificate required (next available class offered after time of employment).
• Culinary arts degree preferred, but not required
• At least five years of restaurant work with a minimum one year restaurant management.
• Keen attention to detail.
• Ability to be a team player with positive energy and a professional demeanor.
• Clear concise verbal and written communication.
• Excellent organizational skills with the ability to multi-task and prioritize workload.

Versatility is a must. This position assists members and Hotel guests with exercise and facility functions. Individual is required to maintain the cleanliness and upkeep of the club to ensure conformance with the Preferred and Hotel Standards. Assist members and guest by answering questions, orientating them to the Club accommodations and responding to any complaints or suggestions. Must be able to work nights and weekends. Full time hours available. Salary DOE
Responsible for general maintenance of commercial building in areas of plumbing, electrical, HVAC, refrigeration, pneumatic controls, general repairs, and guest room calls. Possibly ordering of parts and keeping inventory. Hotel experience a plus. Must be able to lift 50 pounds regularly, and over 50 pounds occasionally. Salary DOE
This position is responsible to ensure prompt and smooth flow of meal service in accordance with the Preferred Hotel Standards. This individual is required to prepare roasts, sauces, and gravies and perform all duties necessary in preparing food for dinner. Salary DOE

This position is responsible for:

• Processing daily food & beverage requisitions from all restaurant outlets.
• Entry of food & beverage requisitions into tracking spreadsheet.
• Entry of food & beverage price updates from vendor invoices into tracking spreadsheet.
• Assisting with monthly food & beverage physical inventory count/reconciliation procedure.
• Reconciling banquet bar cart inventories/sales upon completion of banquet event.
• Assisting the Food & Beverage Cost Accounting Manager as necessary.
• Cross train with others to fill positions as necessary
• Paper and electronic document filing

The ideal candidate will need to have:

• High school diploma or equivalent.
• One to two years of experience in the accounting field.
• An Associate degree in accounting (preferred).
• Experience working with Chef Tec (preferred).
• Food and beverage industry experience (preferred).
• Excellent Microsoft Excel skills.
• Accurate data entry.
• Keen attention to detail.
• Good understanding of basic unit of measurement conversions.
• Ability to be a team player with positive energy and a professional demeanor.
• Clear concise verbal and written communication.
• Excellent organizational skills with the ability to multi-task and prioritize workload.
• Must be over 21 years of age.
