Sous Chef at Fletcher's

This position is directly responsible to ensure prompt and smooth flow of meal service in accordance with the Preferred Hotel Standards. This individual is responsible for supervising, scheduling, and monitoring performance of all Kitchen staff and activities and may perform all tasks and functions of the Kitchen Department.

Essential Functions:
• Coordinates with Kitchen staff in regard to assigned duties and to assure all guests are provided with superior service
• Coordinates with Executive Chef for policy and procedures regarding food preparation and presentation, proper recipe specifications, costs and selling prices and waste factors
• Instructs cooks in Hotel standards food preparation
• Direct and assist cooks in daily production
• Makes decisions concerning quality, quantity, and time-job allotments to ensure prompt and smooth service, under the supervision of the Executive Chef.
• Coordinates with Human Resources regarding staffing issues, hotel activities and future events
• Approves the daily menus, quality and quantity of foods prepared
• Directs cooking staff as to inventories and functions on a day-to-day basis
• Ensures staff utilization of time to minimize labor costs
• Inspects kitchen for cleanliness, orderliness, maintenance needs and security
• Available and prepared to work scheduled shifts and some irregular hours
• Other duties as assigned
• Food Worker's Card/Serve Safe Certified

Minimum Education:
Culinary Arts Degree is preferred for the position.

Minimum Experience:
Five years cooking experience in a hotel or high-volume restaurant and one-year previous supervisory experience is required of the position. Food & Beverage procedures are responsibilities of the position. Working knowledge and skills in Classic food preparation, as well as American and European Regional dishes.

Skills/Abilities:
Interpersonal and oral communication skills are essential requirements for the position. Ability to understand food preparation and menus’ recipes, and a capacity to adapt, combine or make improvements in programs or service is required of the position. A personal and polite attitude along with a professional appearance is required of the position. Ability to deal with stress and posses’ strong leadership, organization, problem solving, and reasoning skills are key functions of the position. Individual must have integrity, honesty, and a cooperative attitude towards job and personnel. Aggressive in maintaining high standards and creative with recipes, menus, and garnishes are required.

Food Expo Position at Whale's Tail (Evening Shift)

Position Overview: Whale's Tail Bar and Restaurant is inviting applications for the role of a Food Expediter for our evening shifts. This part-time position is crucial in ensuring the smooth flow of our kitchen to table service, maintaining the quality and efficiency of our dining experience.

Key Responsibilities:

  • Bridge the kitchen and front of the house, ensuring prompt and accurate delivery of orders.
  • Inspect dishes for presentation and quality before they are served.

Busser at Fletcher's or Whale's Tail

Position Overview: Whale's Tail Bar and Restaurant is seeking a dedicated Busser to join our evening team. This part-time role is essential in maintaining the cleanliness and efficiency of our dining area, ensuring a pleasant experience for our guests.

Key Responsibilities:

  • Promptly clear, clean, and reset tables after guests depart.
  • Assist in maintaining the overall cleanliness of the dining area, including floors and surfaces.
  • Support waitstaff with delivering food and beverages, refilling water, and attending to guest needs.
  • Help with setting up the dining area, including the placement of linens, silverware, and glassware.

Qualifications:

  • Ability to work efficiently and courteously in a fast-paced environment.
  • Strong attention to detail and commitment to cleanliness.

Work Schedule:

Doorman

This position is responsible for the initial greeting of guests as they enter the Hotel from 4th Avenue.

*Essential Functions:
• Maintain required post at all times
• Initially greet guests following Preferred standards
• Coordinate with Bell staff for guest assistance and requests
• Maintain cleanliness of and control traffic in circular driveway
• Coordinate taxi cabs, shuttles, valet parking and other transportation requests
• Assist guests with event locations and directions
• Must possess valid Alaska driver's license
• Other duties as assigned by Bell Captain, Concierge or Front Desk Manager

Excellent interpersonal skills as well as a strong command of the English language required (foreign language an advantage). Must have a willingness to serve, a polite attitude and a professional appearance. Must be able to operate a moving vehicle.

This is a full-time, Union position. The shifts we are looking to fill are 3PM-12AM, days off are Sunday and Monday.

Room Attendant

This position is responsible to service guest rooms while maintaining the Hotels Preferred Standards.  This individual is required to acknowledge all patrons appropriately and assist with information and/or special requests.

Essential Functions:

Coordinate with Assistant Executive Housekeeper

Cleaning assigned guest rooms includes:

Cleaning the bathroom area (toilet, shower and tub, and vanity) and restocking with amenities

Straighten and clean the bedroom area (change linen, vacuum, and dust furniture, etc.)

Check to see that all appropriate Hotel information is restocked in room and in proper place                      (stationary, directory, notepad, and pens, Do Not Disturb Sign, restaurant and club information, Hotel brochures, etc.)

Clean and restock bar (napkins, clean bar glasses, etc.)

Inspect furniture, fixtures and equipment and report items needing repairs to housekeeping office (doors and frames, televisions, upholstery, plumbing, paint or vinyl, etc.)

  • Guest belongings organized
  • Retrieve supplies to maid closet
  • Coordinate with security regarding emergency response team functions
  • Work various 8-hour shifts while standing
  • Must be able to lift up to 20 pounds periodically throughout shift
  • Other duties as assigned

Skills/Abilities:

The ability to work quickly, accurately, and safely under pressure is required for the position.  Individuals should be courteous, patient and have a cooperative attitude toward his/her job and other personnel.  Communication skills such as listening, speaking, and reading.


Host/Hostess in the Crow's Nest

This position is required to greet all guests appropriately, seat in the proper section, and provide menus to guests.  Answering telephones, making reservations, and assisting guests with special request is a requirement of the position.  Knowledge of Open Table is a plus.  Part-time evening hours available.  Must be able to work Friday and Saturday.

Minimum Experience:

Prefer one year Host-Hostess

Individual should be courteous, friendly and project a professional attitude always.  The ability to work well with others and desire to serve people are essential functions of the position.  Ability to accurately schedule reservations and provide additional assistance to hotel guests is required of the position.

This position is part-time applicants must be able to work weekends. Applicants must be able to stand through the duration of the shift.


Reservations Clerk

Location: The Hotel Captain Cook

Type: Full Time

Summary of Position:

This position is responsible to promote, upsell and inform guest on services and room types available.  Also responsible for reservation entry into our Hotel computer system, update, and cancellation e.g., phone, mail, telex and rooming list. Typing/Computer skills a must.

Essential Functions:

  • Coordinates with Front Desk for daily arrivals, room assignments and special requests
  • Coordinates with Sales Managers for special services for VIP guests
  • Pre-Registration of all guests with special requests
  • Order fruit baskets, champagne, roll-a-way beds, robes and cribs for incoming guests
  • Services guest according to Preferred Guest Standards
  • Reservation entry into the Hotel computer system
  • Other duties as assigned

Minimum Education:

High School diploma or equivalent

Minimum Experience:

At least 1 year experience in customer service with a background in the Hotel business.  Knowledge of PC based word processing, and database programs are essential.

Skills/Abilities:

Proficient in Microsoft Word/Excel for Windows 95, type 45 wpm, and the ability to quickly learn additional computer programs are required.  Position requires strong problem solving and reasoning skills as well as strong interpersonal skills.  A personal and polite attitude along with a professional appearance is required.  Strong organizational skills and the ability to work in a fast-paced environment are fundamental essential functions of the position.  Knowledge of Alaska, local events, and attractions within Anchorage are essential requirements of the position The Hotel Captain Cook Champions Equal Opportunity Employment.

Banquet Equipment Coordinator

Performs work requested in the set-up, serving and breakdown of banquet functions and convention functions.  Other duties related to routine cleaning and maintenance of banquet equipment and areas.  Schedule is flexible.  Must be able to communicate with guests and guest requests, and work with minimal supervision.  Computer knowledge is a plus.  Must be available days, evenings, and weekends. May be required to lift 50 pounds on occasion.  Salary DOE


Banquet Table Attendant

This position is responsible for providing food and beverage service to hotel guests and the general cleanliness during the banquet function.  He/she is required to provide courteous, efficient service to the guests in conformance with the Preferred Hotel Standards.  This individual is required to acknowledge all patrons appropriately in passing and assist them with any special needs they may require.  Must be 21.


Banquet Bartender

This position is directly responsible for the operation of the Banquet Bars and assures compliance with the Preferred Hotel Standards.  Individuals are also required to greet all guest appropriately and prepare and serve cocktails.  Must be 21, and available to work weekends.


Maintenance

Summary of Position:

Responsible for general maintenance of Hotel in the areas of plumbing, electrical, HVAC, refrigeration, motors, pumps, soldering, welding, television operations, pneumatic controls and general repair.  Must be able to lift 50 pounds regularly, over 50 pounds occasionally

Essential Functions:

  • Coordinate daily tasks with Chief Engineer, Asst. Chief Engineer and First Engineer
  • Assist Security department for staff fire & safety training
  • Responsible for preventive maintenance of safety equipment
  • Coordinate with all other department managers concerning maintenance requests
  • Complete repairs and preventative maintenance per supervisor instruction
  • Monitor building automation system
  • Respond to guest maintenance requests per Preferred Standards
  • Exhibit good personal hygiene habits
  • Available and flexible to work scheduled shifts and some varied shifts
  • Other duties as directed

Minimum Education:

High School diploma or equivalent required.  Certification from a vocational/technical school preferred.

Minimum Experience:

At least one year experience in a maintenance position with knowledge of all areas of building maintenance.

 Skills/Abilities:

Interpersonal, oral, and written communication skills are essential to the position.  A personal and polite attitude along with a professional appearance is required.  Strong reasoning and problem-solving skills are essential functions of the position.  Individual must have integrity, honesty, and a cooperative attitude toward his/her job and other personnel.  Familiarity with blueprints, schematics, and power and hand tools also required.  Training in the operation and maintenance of pools and Jacuzzis preferred.

Steward

Kitchen Maintenance and Cleaning Staff Position

Position Overview: We are currently seeking a dedicated individual to maintain a clean and efficient kitchen environment. This full-time, unionized graveyard position involves various cleaning and maintenance duties within the kitchen.

Key Responsibilities:

  • Maintain a clean working area in the kitchen, ensuring all surfaces, equipment, and utensils are sanitized and tidy.
  • Perform specific cleaning tasks including, but not limited to, ovens and grills, dish machines, and other mechanical equipment.
  • Assist in dish washing, banquet setup and breakdown.
  • Coordinate with the Executive Chef, Executive Sous Chef, and Chief Steward to fulfill assigned duties effectively.

Requirements:

  • Physical fitness and ability to lift up to 50lbs.
  • Ability to work graveyard shifts as part of a full-time schedule.

Qualifications:

  • Previous experience in kitchen maintenance and cleaning is preferred.
  • Strong attention to detail and ability to work independently.

Salary:

  • Dependent on experience (DOE).
