o Deliver service that adheres to the highest standards of fine dining etiquette.
o Coordinate with the Food & Beverage Director to ensure adherence to Preferred Hotel and Fine Dining Standards.
o Coordinate with the Restaurant-Bar Manager regarding assigned duties and expectations for each shift.
o Work with the kitchen staff to relay special orders, explain the menu to guests, and ensure food presentation meets fine dining expectations.
o Provide exceptional, attentive service throughout the entire meal, ensuring the dining experience is refined, pleasant, and memorable.
o Efficiently take guests’ orders, including any modifications, allergies, or dietary restrictions, while maintaining poise and professionalism.
o Proficiently upsell premium items such as appetizers, wines, and daily specials using refined and descriptive language.
o Present and pour wine according to fine dining service standards; be knowledgeable about wine pairings.
o Ensure constant monitoring and refilling of beverages, such as wine and water, without interrupting the dining experience.
o Memorize and present daily specials using engaging and appetizing descriptions.
o Supervise bus staff, ensuring all service tasks and table clearing are done with efficiency and precision, aligned with fine dining protocols.
o Set tables meticulously with appropriate fine dining utensils, glassware, and napkins.
o Maintain an immaculate workstation, ensuring all service areas are clean and well-stocked throughout the shift.
o Offer assistance in seating, presenting menus, and making menu recommendations based on the guest’s preferences.
o Confidently serve a variety of guest groups, such as wedding parties, business meetings, and social gatherings, adjusting the service style to fit the occasion.
o Present the check with discretion and courtesy, within five minutes of the guest finishing their final course.
o Thank guests personally for their patronage, using their names where appropriate, to create a personalized and memorable dining experience.
o Execute opening and closing side work duties to maintain the highest level of organization and cleanliness.
o Physically capable of lifting 20 to 30 lbs and working on foot for extended shifts.
